Chocolate Chip Cookies

Did you know you can bake with Carotino Healthier Cooking Oil? Everyone knows butter is great for baking, but there are lots of reasons why you might want to try something different. Maybe you follow a vegan diet, or you want to cut down on your cholesterol and saturated fat, or maybe you just ran out of butter! Either way, Carotino Healthier Cooking Oil ticks all the boxes and is great for many recipes where oil can be used as an alternative, like this tasty recipe for chocolate chip cookies.

Ingredients

300g plain flour

200ml Carotino Healthier Cooking Oil

2 eggs

220g soft dark brown sugar

100g caster sugar

175g dark chocolate chips

1 teaspoon bicarbonate of soda

1/2 teaspoon salt

1 teaspoon vanilla extract

1 teaspoon almond extract

Method

 

Preheat the oven to 180 C / Gas Mark 4. Mix together the flour, salt and bicarbonate of soda and put on one side.

Stir together the Carotino Healthier Cooking Oil, soft brown sugar and caster sugar in a large mixing bowl, until really smooth. Beat in the eggs, then add the vanilla and almond extract. Stir in the flour/salt/bicarb mix, then add in the dark chocolate chips. Spoon in cookie sized portions onto a large baking tray.

Bake for approx. 8 to 10 minutes depending on size of cookies. Allow the cookies to cool on baking tray for at least 5 minutes before transferring to a wire rack to cool completely.

Makes approx 20 cookies.
