Traditional Cottage Pie
The beauty of Carotino Healthier Cooking Oil is that you don’t really need a load of new recipes to make the most of it, as it’s perfect in a range of everyday dishes. Take cottage pie for instance…just use Carotino Oil in place of your usual cooking oil for a healthier spin on a classic meal. Here’s a classic recipe we like.
2 tablespoons of Carotino Healthier Cooking Oil
450 g (1 lb) cooked or raw meat
1 large onion peeled and chopped
1 tablespoon tomato purée
1 medium grated carrot
½ pint (275 ml) stock
1 oz (25 g) plain flour
Pinch of salt and pepper
450 g (1 lb) potatoes, freshly cooked
1 tablespoon Carotino Healthier Cooking Oil
1 tablespoon milk
2 oz (50 g) grated cheese
1 clove of garlic
A few chopped basil leaves
Pour the Carotino Oil into a large frying pan or wok. Gently fry the onions and carrots together. Add the flour and stir over a low heat until beginning to brown. Remove from heat and gradually stir in the stock. Add the remaining ingredients and bring to the boil, then cover and simmer very gently for 30 minutes (if using raw meat) or 5 minutes (if using cooked meat.) Pour into a casserole dish.
For the topping: Mash the potatoes with a tablespoon of Carotino Oil, milk, garlic, basil and seasoning: Carefully spread over meat and mark the top with a fork. Add the grated cheese. Bake in a pre-heated, moderately hot oven (190 °C/Gas Mark 5) for 15-20 minutes until the top is golden.
