Pork and Pepper Kebabs

This simple recipe for pork and pepper kebabs is ideal for the BBQ or grilling indoors. You can use a little Carotino Healthier Cooking Oil to marinade the meat and also add some to the dressing to drizzle over the top. Delicious with rice, salad or chips.
Ingredients
400g pork steak, cut into cubes
2 tbsp Carotino Healthier Cooking Oil
1 red or orange pepper, deseeded & cored
1 green or yellow pepper, deseeded & cored
1 red chilli, deseeded and finely chopped
1 onion, chopped
1 tsp crushed coriander seeds
15g chopped fresh coriander
1 garlic clove, crushed
2 tbsp lime juice
Ground black pepper and salt to taste
Method

Cut the pork steak into 3 cm cubes, chop the red and green peppers and onion into squares. Mix together the crushed coriander seeds, a tablespoon of Carotino Oil and half the chopped coriander in a bowl. Season with a little salt and pepper to taste. Add the pork and peppers then refrigerate for an hour or so.

Mix the remaining coriander and Carotino oil together with the finely chopped chilli, crushed garlic and lime juice to make a dressing, then season to taste.

Thread the pork, peppers and onion onto wooden or metal skewers, alternating the different colour peppers. Place the pork skewers on a foil lined tray and grill or BBQ for approximately 15 minutes at a high heat, turning often and basting with the juices. Drizzle over the coriander dressing and serve with your choice of accompaniments. (Eg. Rice, salad, chips, baked potato.)
